Directions

  1. Preheat oven to 325°F.
  2. Add 2 tbsp olive oil to a skillet over medium heat.
  3. Add 3/4 lb Italian sausage and cook until nicely browned, 8–10 minutes.
  4. Chop mushrooms and add to the skillet.
  5. Add 6 chopped scallions and 2 minced garlic cloves.
  6. Stir in 2/3 cup panko, then fold in 5 oz mascarpone. Remove from heat.
  7. Mix in 1/3 cup parmesan, 2.5 tbsp parsley, 1 tsp salt, and 1/2 tsp pepper.
  8. Transfer to a baking dish and bake for 50 minutes.

Tip: If assembling ahead, cover and refrigerate. Let sit at room temp 20–30 minutes before baking.
